Christmas Cake
This is a 3 layer 9" red velvet cake with cream cheese frosting covered in rolled fondant. Pine branches hand painted with food color, fondant holly leaves and pine cones, gumpaste flowers and holly berries and royal icing snow flakes.

50th birthday cake for Mom
This was a cake I made for my mom's 50th birthday. She is into scrapbooking so I thought it would be neat to do a 'scrapbook' cake for her. I used edible photo images printed on rice paper that ranged from her young childhood all the way to present time. I wish I had had more time to put into it because I think it could have been a lot better. I was doing so many other things for the party that I didn't have as much time as I would have liked. She loved it though and that is what matters.

Critter cake
This was for my daughters 5th birthday. There is a bird in a nest sitting on eggs. A caterpillar on the cave (with little eyes peering out), a frog and a lobster in the water (she wanted a lobster for a pet this year!), a snail, and lady bugs.
The cake was good too, lemon with one half cherry filling and one half strawberry cream filling. MMMM!!!

Disney Birthday
This was for a Disney themed birthday party. I designed the cakes and assembling them was a group effort. Amber and her mom made the actual cake part, Amber and I iced them, I did the fondant and other details, Ambers mom did the pearl border on the Mickey Mouse cake, Amber did the ears and the writing, and Andi (Amber's sister in law) helped with lots of little things too. We got it done right in time for the party and it was probably the quickest I have ever gotten a cake done. I like having a team!

Barbie Cake
This was for my daughters 6th birthday. She helped design this cake and had in her mind just what she wanted. She wanted to use her Rapunzel barbie. She wanted the dress to be cake but for it to also be on top of another cake that one half was pink and the other purple with the barbie in the middle and a ballerina on each side. We omitted the ballerinas but pretty much everything else she wanted she got. Everything made from fondant. It was chocolate cake with cherry filling, and whip cream icing.

Frog Prince
This was for my daughter's 4th birthday. She loved frogs at that time and wanted a froggy cake. Here is what I came up with. It was really hard to cut him open and eat him because he was so darn cute! Lots of time and love put into this guy. I stacked cakes and carved them out to make the shape,then covered in fondant. If you look closely you will even see a little edible fly. One of my favorites!

This was my daughters cake for her 5th birthday. She picked it out of a book I had. Its choc. cake with cream cheese filling. It had about 5 layers of filling, mmmm goood! All buttercream frosting. It's hard to tell in the pictures but there are two different tones to the pink frosting. It was the first time I had ever made roses, which are royal icing.
Fondant birthday cake
This cake was the first time I had ever worked with fondant. I bought the premade frosting by Wilton. It was really easy and fun to work with and I was so happy with how cute her cake came out but when it came time to eat it, the taste was really undesireable! The fondant was chewy and tasted terrible. I have since learned that Wilton is notorious for their bad tasting fondant and now make my own using Marshmellows and sugar! Yummy!

I guess I felt guilty that I hadn't ever made Emma a homemade cake so I decided to do so on her second birthday. It turned out a little better than Katrina's 1st cake but still had a few flaws. I gained a little more confidence with it though because I didn't have any disasters so this is one of the reasons why I kept making them. Thanks to Emma!

Humble beginings
This was the first cake I ever made, ever. It was almost the cake that stopped me from ever making another cake again! I got the recipe from my friend who makes the best cakes. It was homemade carrot cake with butter cream frosting. I grated all the carrots myself, baked the cake, then when it came out of the oven (around 10pm the night before my daughters first birthday party) when I tried to get it out of the pan, some of it came out, and some of it stuck to the bottom of the pan. I was so upset, I put it all in the trash, ran the store for more carrots and started over. I think I finished around midnight, could have been later but I didn't have the heart to try and get it out of the pan again. I took it to my moms the next day and made her do it! It came out okay this time. Then came time to frost. My daughter was really into Elmo and Sesame Street at that age so that is why the cake is green and yellow (like the SS sign). I obviously had never frosted a cake before and the frosting was a little off in taste because I added one wrong ingredient. I was finding green frosting in my kitchen for months after that too! It was very stressful and not all that great tasting and took a lot of work so I vowed after that that I would never make another homemade cake again! I have to say though my daughter thoroughly enjoyed shoving her hands and face into it so I guess it was worth that!
